Keto Pumpkin Bread Bars

Ingredients

  • 1/4 cup Softened Butter (NOT MELTED)
  • 2 Eggs
  • 1/4 cup Pumpkin Puree
  • 1 1/2 cups Almond Flour
  • 1/4 cup Coconut Flour
  • 1/2 cup Monk Fruit Powder (or other low carb sweetener)
  • 2 tsp. Baking Powder
  • 1/2 tsp Xanthan Gum
  • 2 tsp. Pumpkin Pie Spice
  • 1/2 cup Sugar Free Chocolate Chips (optional but delicious)

Instructions

  1. Preheat your oven to 350 degrees. Grease an 8X8" pan with non-stick spray or coconut oil.
  2. In a bowl, combine the softened butter and monk fruit powder. Add the pumpkin puree and then the eggs and mix till blended.
  3. Add the remaining dry ingredients and mix till it comes together. Fold in the chocolate chips.
  4. Add the whole mixture to an 8X8" pan and spread till it is even.
  5. Bake for 18-20 minutes. Allow to cool and slice into 12 bars. Store in a container for 5-7 days.
